Overnight Oats: 6 Delicious Recipes

Overnight oats are the latest breakfast trend & it’s a good one if I do say so myself. Mornings can be very busy, getting ready for work and for some, getting little ones ready for school. It’s so easy to eat a breakfast bar filled with high fructose corn syrup and other processed ingredients or a bowl of cereal that will spike your blood sugar first thing in the morning. 

 

Gone are those days. We are transitioning to overnight oats that will provide you with protein, fiber, vitamins, minerals, and antioxidants. It’s a great way to start your day on a healthy note. 

 

Nuts and Berries Overnight Oats

 

This is a classic and you can’t go wrong with it. The sweet, fresh taste of the berries and the perfect crunch of the nuts makes this a breakfast you won’t want to miss. This recipe uses strawberries and blueberries, however feel free to switch those out if those are not your favorite. Mixed nuts can include walnuts, pecans, peanuts, cashews, etc. You really can’t go wrong with walnuts if you ask me! You can also substitute nuts with granola as that has a great crunch to it as well.

Ingredients:

 

  • ½ cup of rolled oats
  • 1 tablespoon of plain Greek yogurt
  • ½ cup of milk of choice
  • 1 tablespoon of chia seeds or flaxseeds (optional)
  • 1 teaspoon of vanilla
  • 1 tablespoon of honey
  • β…“ cup of strawberries
  • β…“ cup of blueberries
  • 2 tablespoons of mixed nuts

 

Instructions:

  • Combine and mix the oats, yogurt, milk, chia seeds/flax seeds, vanilla, and honey in a jar or meal prep container. 
  • Store overnight in the refrigerator for approximately 8 hours.
  • Add strawberries, blueberries, and mixed nuts before eating.
  • Enjoy!

 

Cookie Dough Overnight Oats

 

Sweet tooth, anyone? This is a great recipe if you have a sweet tooth first thing in the morning. It’s basically dessert for breakfast. While this is a great breakfast meal, you could also enjoy this as a dessert. You can even add in those Ben & Jerry’s Cookie Dough Chunks. Now that sounds good.

Ingredients:

 

  • 3 ¼ cup of milk of choice
  • 3 cups of rolled oats
  • 2 tablespoons of brown sugar (can substitute with maple syrup or honey)
  • 1 teaspoon of cinnamon
  • 1 teaspoon of vanilla extract
  • ¼ cup of chocolate chips

 

Instructions:

 

  • In a bowl, add milk, rolled oats, brown sugar, cinnamon, and vanilla extract and stir to combine.
  • Pour the mixture evenly into jars or meal prep containers.
  • Cover and refrigerate overnight (about 8 hours).
  • Top with the chocolate chips and enjoy.

 

Blueberry Muffin Overnight Oats

 

Blueberry muffins but healthy? Sign me up. This is an easy way to make a sweet breakfast treat healthy & you won’t have to fire up the oven. While the recipe calls for frozen blueberries, feel free to replace them with fresh ones!

Ingredients:

 

  • 3 cups of frozen blueberries
  • 2 cups of milk of choice
  • 2 cups of rolled oats
  • ½ cup of butter of choice
  • 4 tablespoons of maple syrup
  • 4 tablespoons of ground flaxseed
  • 4 tablespoons of nut of choice (optional)
  • 1 teaspoon of ground cinnamon
  • 1 ¼ cup + 1 tablespoon of plain greek yogurt

 

Instructions:

 

  • Thaw the blueberries in the microwave or in a saucepan on the stove for 3-4 minutes and let cool.
  • In a bowl, combine the milk, rolled oats, butter, maple syrup, ground flaxseed, nuts, and ground cinnamon. 
  • Divide the blueberries in half.
  • Evenly distribute the half of blueberries throughout 4 jars or meal prep containers.
  • Evenly distribute the oat mixture on top of the blueberries.
  • Evenly distribute the yogurt on top of the oat mixture.
  • Evenly distribute the rest of the blueberries on top.
  • Cover and refrigerate for 6 hours.
  • Enjoy.

 

Apple Cinnamon Overnight Oats

 

Another classic in the oatmeal department. Cinnamon is an easy way to make plain oats delicious. Add in that soft crunch from the apple and you got yourself one tasty breakfast.

Ingredients:

 

  • β…“ cup rolled oats
  • ½ teaspoon of ground cinnamon
  • Pinch of ground ginger
  • Pinch of ground cloves
  • Pinch of salt
  • ½ medium apple (diced)
  • ½ cup of milk of choice
  • 1 ½ teaspoons of maple syrup
  • ½ cup of plain greek yogurt
  • 1 tablespoon of ground flaxseeds or chia seeds

 

Instructions:

 

  • Layer the ingredients in a mason jar or meal prep container in the following order: oats, cinnamon, ground ginger, ground cloves, salt, diced apples, milk, maple syrup, greek yogurt, ground flaxseeds.
  • Do NOT shake.
  • Cover and refrigerate overnight (about 8 hours).
  • When ready to eat, shake well or pour into a bowl to stir. 
  • If needed, add greek yogurt or milk to thicken or thin out the consistency.
  • Enjoy!

 

Chunky Monkey Overnight Oats

 

Oh chunky monkey… is that how we’re gonna feel after eating these? Hell no because this is a guilt free recipe that will offer you all the fiber and protein you need for the morning.

Ingredients:

 

  • ½ cup of rolled oats
  • 1 tablespoon of plain Greek yogurt
  • ½ cup of milk of choice
  • 1 tablespoon of chia seeds or flaxseeds (optional)
  • 1 teaspoon of vanilla
  • 1 tablespoon of sweetener of choice (honey, syrup, stevia, brown sugar, sugar, etc.)
  • β…“ cup of sliced banana
  • 1-2 tablespoons of peanut butter
  • 2 tablespoons of chocolate chips (melted if you want!)

 

Instructions:

 

  • Combine and mix the oats, yogurt, milk, chia seeds/flax seeds, vanilla, and sweetener in a jar or meal prep container. 
  • Store overnight in the refrigerator for approximately 8 hours.
  • Add sliced bananas, peanut butter, and chocolate chips before eating.
  • Enjoy!

All my Reese’s fans please stand up! This classic combination is just what you need to spice up those plain, boring oats. Dark or milk chocolate, your choice. However, if you add dark chocolate instead, you will reap many more benefits. These include being a source of antioxidants (which rid your body of free radicals), helps reduce the risk of heart disease, lowers blood pressure, helps with blood flow, and can improve brain function. The choice is yours.

Overnight oats are made to be eaten cold. They are supposed to be a healthy, easy, on the go breakfast that you can eat, without worrying about heating it up. If you prefer to eat your oats warm, you can easily warm them up in the oven or microwave.

Overnight oats can sit in the fridge for up to five days. That means you can easily double or triple your recipes so that you don’t have to make them every night. 

 

A great idea would be to make a recipe for four to five servings, eat those, and then try a different flavor recipe. It will keep breakfast interesting.
